Kanda Pohe / Savoury Flattened Rice

This recipe is close to my heart, because this one has passed down to me by my daddy dearest and he always makes variations to this simple recipe. Garnish of sev will always be my top favorite.

This recipe has tadka of fenugreek seeds if you don't like the crunch of bitterness you can avoid it.

Ingredients

  1. 1 cup Poha / Flattened rice
  2. one medium sized diced onion
  3. 1–2 chopped green chilies
  4. 4–5 curry leaves
  5. 1/2 teaspoon turmeric powder
  6. 1teaspoon sesame seeds
  7. 1tablespoon chopped cilantro leaves
  8. 1teapoon mustard seeds
  9. . Before you do anything else, wash the poha a few times in running water until it softens, and then strain out all the water. Do not soak the poha in water or else it might turn soggy and mushy.1/2 teaspoon fenugreek seed
  10. handful of roasted groundnuts
  11. shredded or grated coconut for the garnish
  12. salt as per taste
  13. little sprinkle of sugar for flavor…totally optional
  14. lemon wedge

How to make this recipe

  1. Wash the poha in running water until it softens, and t
  2. hen strain out all the water.
  3. Do not soak the poha in water or else it might turn soggy
  4. Set the poha aside, In a pan, heat up a little oil, and fenugreek and mustard seeds let it splutter, then add cumin seeds and sesame seeds let it crackle then add onion, curry leaves, peants and green chilies and sautee on medium flame until the onion turns translucent
  5. Now add turmeric powder, poha and mix everything well
  6. cover the pan for min or so…
  7. after a min…add salt, sugar and lemon juice if you want, mix well
  8. garnish with cilantro, sev, pomegranate arils
  9. serve hot with tea
